Our firm is manned and administered by Human Resource Development experts and highly seasoned hoteliers whose competence is honed by their very rich academic background and managerial exposure in various companies in the Philippines and abroad.

 

Ms. Amelia “Amy” Roldan is the president and managing partner of the company. She has been engaged in hospitality training and consultancy for more than 20 years. She started her hotel career at Manila Garden Hotel (now Dusit Hotel ) as Training Manager, handling both In- house training for hotel employees while at the same time managing the Hotel Nikko International Training Center that offered public seminars on all aspects of hotel and food service operations.

Amy has done series of training and consultancies all over the Philippines and even as far as Europe as Project consultant to non government organizations.

She has been tapped by many industrial, commercial and tourism establishments, government and non- government organizations as training consultant on Corporate Planning, Customer Service, Management and Supervisory Development, Behavioural Programs and other aspects of Human Resource Management. Ms Roldan is also actively involved in the design and administration of Behavioural Modification Programs, project management, documentation services and organizational development. Lately, she has written and published seven books on Hospitality Services and does documentation for ISO accreditation. She is also one of the training consultants of the Department of Tourism in the conduct of Tour Guiding, Customer Service and other areas of training.

 

Benjamin “Benjie” Singson is one of the most acclaimed hotel, sales and marketing consultant who brought millions in revenue to the hotels he managed. He puts into action the marketing strategies that he shares in his marketing workshops, making a turn around for his client hotels who were struggling for survival, making them top grosser in their area. He is one of the Hotel executives in Hotel Nikko who rose from the ranks – from houseman to a supervisor, to an Asst. Executive Housekeeper and Front Office Supervisor. From Hotel Nikko, he joined Exclusive Estancia as Resident Manager. Then he served as General  Manager of Court Meridian in Subic, after which he was taken as Hotel Operations Director of Narra Hotels Group.

He is now a full time trainer-consultant of SDMS and has done several hotel consultancy projects for clients like Agatha Hotel in Pampanga, Metro Center Hotel in Tagbilaran City and Green Glass Hotel in Laguna.

 

Enrique “Ricky” Megino is one of our Financial Management experts with more than 15 years of experience in Cost and Financial Management in the Hospitality Industry. He started his hospitality career as Head of Accounting at Urban Chef, a large concessionaire that runs 30 food outlets. Then he was taken as retainer consultant on Finance and Cost Control by various food chain, doing financial audit, installation of accounting and control systems and troubleshooting financial problems, thereby turning losses to profits. At present. Mr. Megino serves as Managing partner and Operations/Finance Manager of Bigmouth Food Services, a food chain that operates several food outlets.

 

Highly seasoned kitchen artist and Gardemanger; Chef Anton Roldan has served Dusit Hotel as Chef Gardemanger for 6 years;   also worked at Heritage Hotel as Demi Chef and kitchen Artist. He has been a multi awaredee in several chefs competition and taken as coach and judge by schools and competing establishments in various cooking contests. Chef Anton specializes in cold dishes, ice, fruit, and vegetable carving, food presentation and international cuisine

 

Chef Jean-Pierre Migne is one of the most respected and experienced Culinary practitioners in the Philippines. Many of the young successful Chefs today have once worked with Chef JP. He is well- known in the Philippine hotel and restaurant circle and enjoys the great respect of local and expat hotel and restaurant leaders and food experts in the Philippines.

He was behind the success of many five star hotels and leading restaurants in the Philippines and abroad. He has trained culinary teams, woked on business plans, prepared and tested menus that attracted customers and provided owners with a very good return on investments.

Chef JP was part of the Opening Teams of hotels in the Middle East and China and has led culinary award winning culinary teams in Hotel Nikko Manila, Diamond Hotel, Century Park Sheraton, Sheraton Great Wall, Beijing, Hotel Intercontinental, Jakarta and Meridien Hotel, Kuwait. In the Philippines he has worked with Via Mare and Meal Solutions Inc.

Chef JP is a Certified Culinary Instructor certified by the French Creteil Academie under the French Ministry of Education. He is a member of the French Culinary Academy. He was a Certified Culinary Chef Instructor in FAA Vocational Culinary Center in France and Chef Consultant of the Lactalis Group in France. Currently he is the Head of the Culinary Center of Don Bosco/Tuloy Foundation.

 

Lourdes “Louie” Migne

Her many awards and recognition on the job is a testimonial to her successful track record in creating and leading efforts to manage, communicate, motivate and inspire teams in the Philippines and across Asia Pacific. Chef Ben Casabon is one of the most in-demand trainer-consultants on culinary operations, with more than 20 years culinary experience. Rising from the ranks, he became a Sous chef of Silahis International Hotel and also Manila Peninsula Hotel. Then he joined Puerto Azul Resort as Chef-F/B Manager. Chef Ben was also once connected with Century Park and Manila Midtown Hotel as Sous chef. With his culinary expertise, he became a favorite judge and coach in various culinary skills competition. He is now a trainer-consultant of SDMS, the Department of Tourism, TESDA, and several HRM schools. Chef Ben has also been doing a series of consultancy to several food chain and hotels

 

Carmen Talosig, Trainer –Consultant on Finance and /Cost Mgt is one of the top trouble shooters for companies experiencing tremendous losses emanating from waste, pilferages due to very loose control. She has worked for several 5 star hotels including Shangri-La and Diamond Hotel initially as auditor, to accountant, cost controller and finally comptroller. After leaving her hotel employment, she opted to become a free lance trainer-consultant on cost accounting, financial and assets management and other related ventures. Ms Talosig is a certified public accountant (CPA) ,

 

With more than 30 years of culinary experience, Chef Carlos Polonan (Culinary Trainer) can be considered one of the high caliber chefs in Asian and International Cuisine. He serves as Trainer and Executive Chef of the Charles Culinary Institute; had been an Executive Chef of Norwegian cruises; Head of the Culinary Training Department of Norwegian Training Institute, and also once a Culinary Instructor at the De La Salle University

 

Edison Navas has been in the hospitality industry for more than 20 years starting at Manila Garden Hotel as waiter, to a supervisor and to a manager of Banquet and formal dining outlets. From Hotel Nikko, he joined Tanoa International Hotel in Nadi, Fiji Islands as Food & Beverage Manager. From abroad he came back to the Philippines to join Mandarin Hotel as Banquet manager. He also took time to serve as special lecturer to several HRM schools like Dela Salle University and the Asian School of Culinary Arts.

Mr. Navas takes pride for being a multi awardee – as Model Manager at Hotel Nikko, Employee of the year during his early years in the hotel and silver medalist in flambé competition.

 

Mr. Benito “Benny” Edica is a food and beverage expert with more than 20 years experience in the Food Service Industry. He started his hotel career as banquet waiter at Manila Garden Hotel. With his meritorious performance, he was given successive promotions, first as captain waiter, then as Room Service and Outlet Supervisor and finally a Banquet Service Manager. For several years, Benny was chosen to represent the hotel in various Skills Olympics in the Chef’s on Parade and he garnered several awards, giving honor to his company.

After serving the hotel for 20 years, Benny opted to retire and set up his own firm, the Seels Hoteliers Consultancy and Manpower Services. He sits in the board as company president. Likewise, he serves several schools, hotels and food chain as Resource Consultant for their In-house Training. Occasionally, the Department of Tourism, the Technical Education & Skills Development Authority (TESDA), the Tourism Industry Board and the Hotel and Restaurant Association tap his services for training, trade tests, consultancy, and as a judge and  organizer of Skills Olympics.

 

Ms Naty has been a hotelier with more than 20 years managerial experience on Housekeeping operations. She started her hotel career as Housekeeping Supervisor at Phil. Plaza Hotel and at Manila Peninsula. She later joined Silahis Hotel and the Bacolod Convention Cente as Executive Housekeeper. After retiring from her hotel job, she opted to be a special trainer/lecture on Hotel and Housekeeping Operations at the Phi. Womens University.

 

Chef Michael Ecogo is a seasoned chef with more than 10 years of culinary experience; currently employed as Sous Chef of Vikings Luxury Buffet, doing menu and product development. He specializes in Asian and Western cuisine. For more than 5years, he served as Chef D’ Partie in Qatar and at the Royal Caribbean cruises He is a multi awardee in several chefs competition.

 

Rolly Dela Cruz is also a hotelier with humble beginnings at Hotel Nikko Manila Garden, He started as barboy, then given successive promotions, from a bar captain to a supervisor and finally as Bar Manager. As bar administrator, he was intensively involved in the preparation of drink recipes, concoction of drink of the month, design of marketing strategies and supervision of five bar outlets of the hotel. He also represented the hotel in various competition, garnering top awards. Mr. dela Cruz is also often tapped by many schools and establishments as judge in skills Olympics and as trainor on bartending and bar management.
